The South Australian dairy industry has a long history of producing quality dairy products. Our milk has a record high level of butterfat and protein - crucial to economical manufacture and processing into dairy products. On average the South Australian dairy industry produced almost 500 million litres of milk from its 82,000 cows, bringing over $940 million into gross food revenue in 2016-17.
