Food sciences

SARDI's food sciences research division produces findings that underpin public health legislation. We advise industry and regulators of best-practice, helping SA to comply with industry market access criteria.

Our research involves analysing food risk and identifying objective management strategies. We also develop technologies to optimise processes across the supply chain.

Our core skills include:

  • food microbiology and molecular biology
  • novel diagnostics for food safety hazards
  • food product development, integrity testing, and quality troubleshooting
  • sensory evaluation and shelf-life extension
  • food chain statistical services and modelling.

Our specialist research applies to all commodities and industry sectors, supporting the economic development of agri-food.

Research conducted at the Waite campus, University of Adelaide, uses:

  • analytical and sensory laboratories
  • a product development kitchen
  • small-scale packaging and processing equipment.
