Ray Borda started Macro Meats in 1987 to sell kangaroo meat as pet food. However, he always believed the leanest of red meats had a place on dinner tables around the world and his determination to prove that point quickly paid off.
Within seven years he was selling premium kangaroo meat to Belgium and his company now exports to more than 50 countries, as well as supplying major supermarkets and restaurants in Australia.
Ray worked closely with the government and regulators over many years to assist in developing regulations for the industry and continues as president of the Kangaroo Industry Association of Australia. He is also the Chairman of Food South Australia.
Ray believes South Australia's strength is "our food and its quality and provenance" and wants the state to be seen "like a designer label".
"I don't think it's about competing with other states," he said.
"I'm trying to sell us as a region and I tell them our specialty is top end produce because exclusivity is a selling point."
